Wellness Punks, Holistic Health & Nutrition Recipe

Pumpkin Cocoa Cookies! [egg free, gluten free, grain free]

1/2 cup pumpkin puree
1 1/2 cup almond flour/meal
1/3 cup maple syrup
3 tsps cocoa powder
1/4 tsp baking powder
1/4 tsp ginger
1 tsp cinnamon
1/4 tsp vanilla extract
2 tsp gelatin, softened (allow gelatin to soften in 2 tbsp water for 5 minutes)

Preheat oven to 350°F

Mix ingredients well and drop batter into 2" cookies on to parchment lined baking sheet.

Bake for about 25 minutes.
